What does the TA in honey represent, then?

Total activity (TA) is a value used to evaluate honey's effect on bacteria and pathogens1.

Honey can be more effective and potent against harmful pathogenic microorganisms with a higher TA value. It has the potential to kill these toxic components. As the antimicrobial qualities in honey's composition grow, so does its TA value.

TA is usually on a scale from 1 to 20. TA10+ values provide beneficial properties for honey. Values above TA30+ indicate exceptional advantages to health. Thus, it proves that honey can be helpful enough to be used for apitherapy2.

How is Total Activity (TA) calculated?

Honey has two different types of activities. These include Peroxide Activity (PA) and Non-Peroxide Activity (NPA). The TA value is the sum of these values.

TA (Total Activity) = PA (Peroxide Activity) + NPA (Non-Peroxide Activity)

Peroxide Activity is the natural antibacterial and antifungal ability acquired by bees to protect their honey. It is caused by hydrogen peroxide, which occurs naturally in honey. Non-peroxide activity is bioactivity4 resulting from the presence of additional bioactive chemicals in honey.

The use of total activity analysis in honey has grown recently. It is crucial that the Total Activity level be higher than 10 in order to perceive the possible health advantages of organic honey.
